The word “healthy” being used in connection with ice cream sandwich? Is that even possible? Our answer is YES. Everyone loves ice cream and cookies, right? So does the one and only Beyoncé and we thought, hey, let’s veganize one of Queen B’s favourite treats. Wanna know how to make it? Then follow our instructions and enjoy!
COOKIES:
250 g oat flour
1 ½ ripe bananas
1 tsp baking powder
Mash the bananas and add oat flour + baking powder, combine and form into even sized cookies.
Bake at 180 C until slightly golden
ICE CREAM:
Frozen bananas
Vanilla powder
Cacao nibs
In a high speed blender/food processor, add the (pre sliced) frozen bananas, one or two splashes of water and as much vanilla as you desire. Blend until smooth. Stir in some cacao nibs.
Simply fill the oat cookie sandwich with your banana ice cream!
DECORATION:
Cacao nibs
If you want, you can put cacao nibs on the outside of the cookie, but that’s entirely up to you!
