WATERMELON GRANITAS

Sweet and salty, crunchy and creamy, these opposites create some of our favorite snacks and dishes to this day. These legendary combos tingle the taste buds and heighten the flavor palate of any dish. Vegans don’t have to miss out on these flavor combinations either! With fun fruit based dishes like a granita, you can play around with your favorite fruits and citrus to find a profile that works for you.

With this Watermelon Lime Granita, the watermelon provides that natural sweetness while the lime cuts it with a nice citrus tang. This perfect summer dessert brings together sweet and sour in a seamless opposition!

WATERMELON LIME GRANITA
(Serves 4)
INGREDIENTS:
1/2 large seedless watermelon, 2-inch pieces (no rind)
1/4 cup lime juice
1/4 cup granulated sugar
1/4 teaspoon kosher salt
1/8 teaspoon cayenne pepper

 

DIRECTIONS:


Purée the watermelon, lime juice, sugar, and salt in a large blender until smooth. Strain the mixture through a fine-mesh sieve into a large glass baking dish and discard the watermelon pulp solids. Freeze the mixture for 30–35 minute increments and using a fork, scrape the mixture as it gradually freezes.

Continue to freeze the mixture, scraping and breaking up every 30 minutes, until the texture becomes like fluffy shaved ice. This should take anywhere between 1 to 3 hours depending on the temperature of the freezer. To serve, use an ice cream scooper and top with mint or a dusting of cayenne pepper.
