First times are all about experiencing, or in this case tasting the unknown. For vegans there are many unknown replacement products and recipes just waiting to be developed and devoured by many. Thanks to innovative companies we now have delicious vegan friendly cheese, butter, mayonnaise and many more products to come our way in the near future. If you have yet to try a cheese or mayonnaise, we have the perfect recipe for you to try both! These vegan cheese quesadillas with cilantro lime cream dipping sauce are so simple to make and even easier to approach as your first experience with vegan replacement products!
Vegan Quesadillas with Cilantro Lime Cream
Ingredients for each Quesadilla:
-1 tablespoon of olive oil for the pan
-2 flour tortillas
-1/3 cup of vegan cheddar cheese
Directions:
In a small sauté pan on medium heat, drizzle the olive oil to fully cover the surface of the pan. Place one tortilla on the pan, fill with the cheese, and place the other tortilla on top of the cheese. Cook on each side for 2-3 minutes until the tortilla is golden brown. Feel free to customize your quesadilla to however you like, as this is just the basic recipe for a vegan quesadilla. Try the addition of fajita vegetables, Pico de Gallo salsa, black beans, or even avocado to your standard “cheese” quesadilla.
Ingredients for the Cilantro Lime Cream:
-1/2 cup of vegan mayonnaise
-3 tablespoons of chopped cilantro
-Juice of 1/2 a lime
-1/2 teaspoon of salt
Directions:
In a small bowl combine all the ingredients together and mix until the texture is creamy throughout. Chill for 15-20 minutes and serve with the quesadilla!
