We can’t believe it’s October already! The season we’ve all been waiting for. Crisp golden leaves on the ground, pumpkins, halloween & cosy nights in with a hot coco. Speaking of pumpkins, how excited are you for pumpkin soup & vegetable stew? With the weather getting colder, we need to keep our immune systems strong, orange and yellow vegetables help to boost your immune system. Make sure to incorporate lots of sweet potato, squash, pumpkin and carrots into your meals this Autumn. We absolutely love sweet potatoes, they are so versatile and are great for stabilizing blood sugar levels in diabetics. Sweet potatoes are an absolute staple in every vegan’s diet, mash them, roast them, blend them, bake them. A sweet potato a day keeps the cancer away. That’s right, studies have shown sweet potatoes help with cancer prevention, just when you thought you couldn’t love them anymore.

Try this simple sweet potato wedges recipe!
2 whole medium sweet potatoes chopped into wedges
2 tspn of oil
1 tspn of garlic granules or garlic salt
1 tspn of ground mixed herbs
Salt & pepper to taste
Toss in bowl
Lay the wedges in a lightly greased baking tray or on baking paper & bake for 15-25 mins.
Serve with your favorite vegan mayonnaise, or dip of your choice! Sweet potato wedges make for a great snack or part of a meal.
